- Prepare the Apple Filling
In a small saucepan over medium heat, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and butter. Cook for about 5–7 minutes until the apples begin to soften and release their juices. - Thicken the Filling
Mix cornstarch and water in a small bowl to create a slurry. Stir it into the apple mixture and cook another 2–3 minutes until the filling thickens into a glossy, fragrant mixture. Remove from heat and allow it to cool completely. - Make the Dough
In a large bowl, whisk together flour and salt. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. - Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together. Form into a ball, flatten slightly into a disk, wrap in plastic, and refrigerate for 30 minutes. - Roll and Cut the Dough
On a lightly floured surface, roll the chilled dough to about ⅛ inch (3 mm) thick. Cut circles about 5 inches (12 cm) wide using a bowl or cutter. - Fill the Pies
Place 2–3 tablespoons of cooled apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together. Crimp the edges with a fork to seal. - Heat the Oil
In a deep skillet or saucepan, heat vegetable oil to 350°F (175°C). The oil should be deep enough for the pies to float while frying. - Fry the Apple Pies
Carefully place 2–3 pies into the hot oil at a time. Fry for about 2–3 minutes per side until they turn golden brown and crispy. The kitchen will fill with a warm cinnamon aroma. - Drain and Finish
Remove the pies with a slotted spoon and place them on paper towels to drain excess oil. While still warm, dust with powdered sugar or sprinkle with cinnamon sugar.
